Noku Maldives is seeking a talented and motivated Junior Sous Chef (Cafeteria) to lead the culinary operations of the staff cafeteria. This role is central to providing high-quality, cost-effective, and sustainable meals that support the wellbeing of our team members.

Key Responsibilities

As Junior Sous Chef (Cafeteria), you will be responsible for:

  • Planning and managing rotating menus tailored to team members’ preferences and dietary needs.
  • Incorporating local and seasonal ingredients to reduce costs and support sustainability.
  • Reviewing and updating recipes to maintain consistency, standards, and cost control.
  • Overseeing daily food preparation to ensure quality, taste, and presentation standards are met.
  • Training, guiding, and motivating the kitchen team to enhance skills and performance.
  • Monitoring inventory, managing ordering and storage, and implementing cost-control measures.
  • Ensuring strict compliance with HACCP and maintaining hygiene across all kitchen areas.
  • Implementing waste reduction practices and maintaining accurate inventory records.
  • Leading daily kitchen briefings and ensuring smooth shift handovers.

Qualifications and Skills Required

To succeed in this role, you should meet the following requirements:

  • Minimum of 5 years of culinary experience, including at least 2 years in a supervisory position.
  • Certification in food safety and hygiene (HACCP, ServSafe, or equivalent).
  • Strong knowledge of kitchen operations, inventory management, and cost control.
  • Ability to thrive in a fast-paced environment and handle multiple tasks simultaneously.
  • Physically fit to meet the demands of standing, walking, and lifting in a kitchen setting.
  • Experience in the Maldives resort industry is preferred but not required.
