Position Available: Sous Chef

Nova Maldives is currently seeking a Sous Chef to support its Executive Chef in managing kitchen operations, curating exceptional dining experiences, and leading a dedicated culinary team. This is a resort-based, full-time position that offers a rewarding opportunity to work in a prestigious five-star environment, delivering memorable meals for a diverse international clientele.

Key Responsibilities:

As the Sous Chef at Nova Maldives, your responsibilities will include:

  • Assisting the Executive Chef in day-to-day kitchen operations, ensuring smooth workflow, organization, and timely service.

  • Leading, training, and mentoring a multicultural team of culinary professionals to deliver consistent, high-quality dishes.

  • Developing and executing creative menus that highlight taste, visual appeal, and culinary innovation.

  • Ensuring that food is prepared according to international standards while preserving the authenticity and character of each dish.

  • Overseeing stock levels, kitchen inventory, and the procurement of high-quality ingredients.

  • Maintaining strict hygiene, sanitation, and food safety standards in compliance with HACCP protocols and resort policies.

  • Collaborating with other departments—including food & beverage, guest experience, and procurement—for coordinated guest service.

  • Participating in menu tastings, culinary events, and seasonal promotions to enhance the guest dining experience.


Ideal Candidate Profile

We are looking for an enthusiastic, highly organized, and innovative culinary professional who is excited to take their career to the next level in a prestigious resort setting.

Qualifications & Experience:

  • Proven experience as a Sous Chef or in a similar leadership role in a 5-star resort or hotel.

  • A minimum of 2 years of relevant experience in a high-volume, luxury kitchen environment.

  • Strong knowledge of international cuisine, food presentation techniques, and kitchen best practices.

  • Familiarity with kitchen operations, including scheduling, costing, and inventory control.

  • A keen eye for detail, particularly in food styling, taste balance, and portion control.

  • Excellent leadership and interpersonal skills, with the ability to inspire and manage a diverse culinary team.

  • Strong command of English, both verbal and written. Additional languages are a plus.

  • Ability to stay calm under pressure and deliver consistent results in a fast-paced setting.
