Job Title and Description: Sous Chef (South American Cuisine)

Patina Maldives is actively seeking a motivated and experienced Sous Chef (South American Cuisine) to assist the Chef de Cuisine in managing all culinary operations within the resort’s outlet. This luxury resort job requires a hands-on leader who can balance creativity with operational efficiency, ensuring the highest standards of food quality, safety, and presentation.

As a Sous Chef, you will be instrumental in planning, organizing, and supervising daily kitchen activities, supporting your team, and contributing to the overall success of the resort’s culinary offerings. This role reports directly to the Chef de Cuisine and holds an Assistant Manager level position.


Key Responsibilities

  • Assist the Chef de Cuisine in overseeing the daily food production and culinary team supervision.

  • Ensure smooth and profitable operation of the kitchen while maintaining Patina Maldives’ cuisine concepts and standards.

  • Control food costs through proper preparation, inventory management, and adherence to food pars and requisition procedures.

  • Maintain food safety standards, including correct storage, rotation, and sanitation practices in line with company policies.

  • Enforce monthly sanitation inspections and ensure compliance with Patina Maldives SOPs.

  • Lead, train, and mentor kitchen staff by implementing daily training programs and supporting HR-led training initiatives.

  • Manage outlet assets and conduct regular maintenance inspections to uphold kitchen safety and equipment functionality.

  • Forecast staffing needs based on business demands and optimize rosters accordingly.

  • Inspire and motivate colleagues, fostering a culture of ownership, accountability, and exceptional guest service.

  • Collaborate with other departments to ensure operational efficiency and seamless guest experiences.

  • Provide performance feedback and support individual career development plans for culinary team members.

  • Uphold guest and colleague privacy and security at all times.

  • Perform any other reasonable duties assigned by management to support kitchen operations.


Qualifications and Skills Required

  • Diploma or Degree in Hospitality Management or Culinary Arts is preferred.

  • Minimum five (5) years of culinary experience, including at least two (2) years in a similar role within a luxury resort or hotel setting.

  • Strong command of written and spoken English.

  • Service-oriented with excellent interpersonal and communication skills.

  • Creative, detail-oriented, and able to multitask effectively while maintaining organization.

  • Physically fit and capable of working long hours under pressure.

  • Proven leadership abilities with a passion for mentoring and developing culinary teams.
