Job Overview
As Chief Butcher, you will play a key role in our F&B Kitchen team, ensuring the highest quality of meat and seafood preparation while maintaining international hygiene and food safety standards. The ideal candidate will have extensive knowledge of meat cuts, processing techniques, and inventory management.

Primary Responsibilities
- Meat Processing & Preparation: Expertly handle, cut, trim, and portion different types of meats (beef, poultry, lamb, seafood, etc.) according to menu specifications.
- Quality Control: Inspect all meat and seafood deliveries, ensuring that only the highest quality products are accepted.
- Inventory & Stock Management: Maintain appropriate stock levels, monitor freshness, and ensure proper storage in line with HACCP standards.
- Menu Collaboration: Work closely with the Executive Chef and kitchen team to develop and introduce new cuts and preparations that enhance the menu offerings.
- Hygiene & Safety Compliance: Ensure adherence to food safety regulations, sanitation protocols, and hygiene standards at all times.
- Cost Control & Waste Management: Monitor portioning and minimize waste while optimizing yield from raw products.
- Training & Supervision: Train and mentor junior butchery staff, maintaining high standards of performance and professionalism in the team.
Who We Are Looking For
We are searching for a highly skilled and experienced Chief Butcher who can bring expertise, creativity, and efficiency to our F&B kitchen team. The ideal candidate should possess the following qualifications:
- Minimum of 3 years of experience in a similar role within a luxury resort or high-end restaurant environment.
- Exceptional knife skills and a deep understanding of meat cutting, portioning, and presentation.
- Strong knowledge of meat aging, curing, and preservation techniques.
- Experience in handling exotic seafood and international cuts of meat.
- A self-starter and goal-oriented professional with a strong work ethic.
- Ability to work efficiently under pressure and adapt to a fast-paced kitchen environment.
