Job Title: Chef de Partie (Butchery)

Key Responsibilities:

As a Chef de Partie (Butchery) at JOALI BEING, your role will be integral in ensuring the highest standards of food quality and preparation. Your main responsibilities include:

  • Butchery Expertise: Skillfully handle all meat, poultry, and seafood preparation, ensuring high-quality cuts and portioning according to the resort’s culinary standards.
  • Kitchen Operations: Work efficiently in a fast-paced kitchen environment, supporting smooth service during peak dining periods.
  • Food Safety & Hygiene: Adhere to strict food hygiene protocols, maintaining a clean and organized butchery station that aligns with Health and Safety standards.
  • Quality Control: Monitor ingredient freshness, minimize waste, and ensure that all meat and seafood products meet the highest quality standards before being used in dishes.
  • Collaboration: Work closely with Executive Chefs and Sous Chefs to develop menu items and improve butchery processes.
  • Inventory & Stock Management: Monitor stock levels, assist in ordering meat and seafood supplies, and ensure proper storage and labeling.
  • Training & Mentorship: Support junior kitchen staff by sharing butchery techniques, knowledge, and best practices to enhance team skills.

Qualifications & Requirements

To be considered for this role, candidates must meet the following requirements:

✔️ Experience: A minimum of three (3) years of experience in a similar role within a five-star luxury resort or fine dining restaurant.
✔️ Culinary Skills: Strong butchery expertise, including knowledge of various meat cuts, aging techniques, and portioning. Experience working in cold kitchen operations is an advantage.
✔️ Language Proficiency: Fluent in spoken and written English, with excellent communication skills.
✔️ Team Collaboration: Ability to work harmoniously in a multicultural kitchen team, supporting colleagues while ensuring smooth operations.
✔️ Adaptability & Problem-Solving: Must be a team player, self-motivated, and capable of handling high-pressure situations while maintaining efficiency.
✔️ Health & Safety Compliance: Strong knowledge of food hygiene regulations and safety protocols in a professional kitchen environment.
✔️ Passion for Culinary Excellence: An enthusiastic and innovative approach to cooking, with a strong understanding of sustainability and mindful eating.
